As we start a new year, it’s always fun to imagine what the future holds and how we’ll get there. Maybe we have a dream trip planned? Or maybe we’ll visit a friend or family member we miss? Perhaps we’ll finally work towards a goal we’ve set or let go of things or habits that are not healthy for us? We all have aspirations and wonderful things to look forward to in 2017. Here are a few of mine! ![]() Getting personal in 2017 While I’ve embraced the immediacy of technology, I still value a personal, hand-written note. Taking the time to sit down and write a heart-felt note to someone is a gift. Every year I plan to send more cards to the people I care about and I am making this the year that I follow through on that on-going goal. And here’s a tip … Trader Joe’s has a great selection of cute, sweet cards at great prices, so you can stock up. Who doesn’t want to add more healthy habits to their lifestyle? I plan to eat more fruits and veggies. To make it easy to grab them when I want to eat, my plan is to prep and clean all produce when I get home from the store. I use a vinegar/water soak to thoroughly clean produce. It also helps them stay fresh longer! Fill your sink or bowl with water and add 1 cup of vinegar. Then toss in all your fruits and veggies and let them soak for at least 10 minutes. Rinse in fresh water and then let dry completely before storing. Voila! You have fruits and veggies that are ready when you are! And here’s a handy link with more info on the vinegar soak. The Never-Ending Salad Bowl is an easy way to eat salad every day. On Sunday, I’ll layer mixed greens in a large casserole dish. Then I add all the veggies I want - sliced cucumbers, cauliflower, cherry tomatoes, carrots, broccoli, etc.. Seal it tightly with a layer of foil and the put the glass lid on to store all week. I believe the keys are keeping it sealed and making sure the veggies are good and dry before layering them. When you want a salad, dish the mixture up in a bowl, add dressing, and you’re getting a serving (or two) of veggies for the day. Healthy does not have to be hard! I have three amazing and very active kids and I want to be right there with them when it comes to activities! We enjoy hitting the tennis courts together, playing golf, biking and walking together, which not only gets us moving, but also gives us a chance to catch up and relax as a family.
